He loves the vibrant colours and tastes that conjure up sunshine and happiness. The dishes are simple and use a range of quality, easily accessible ingredients but, with professional guidance, you can turn them into an amazing meal.
What will I learn to cook?
* Wild mushroom & truffle arancini - making risotto then arancini, which translates as little oranges
* Tuscan panzanella salad - a peasant salad of seasonal ripe ingredients using up stale bread
* Ragu di Bologna - traditional Italian meat sauce using the principles of soffrito, the 'holy trinity' of Italian cooking
* Perfect pannacotta - with just the right amount of 'wobble'
