Led by Peter Vaughan
Having trained in French classical cuisine at Le Souffle, a Michelin-starred restaurant in Park Lane, London (now Italian cuisine - Theo Randal), his first job after qualifying was in the two Michelin-starred La Côtes Saint-Jacques in Joigny, France (still around!)
Since setting up his own business, and developing a naturally balanced style of cuisine, he has worked on adapting these classic techniques to have his lighter, more nutritious signatures, often with a Vaughan's 'twist', but he's always happy to return to his culinary roots, which taught him so much about getting the best out of ingredients.
He loves learning about the history of dishes, the regions they come from and the provenance of ingredients, plus you may well hear stories about his experience as a very young man being the only Briton (with a faltering grasp of French) in a kitchen full of French chef!
